Easter Cake Pops

'Tis the season for Easter Cake Pops (and cake balls). My mom and I stayed up 'til the wee hours of the morning making these fabulous Chick Pops, Easter Egg Pops, Carrot Cake, Lemon Cake...and so on...cake balls.

Shoe Inspired Bridal Shower

For once, a party I didn't throw! I did however make cupcakes, so here we go...


Chocolate Cupcakes with Chocolate Cream Cheese Frosting

Take your favorite chocolate cake recipe and, if you're like me, add chocolate chips to it. I don't know why, but finding chocolate chips in a chocolate cupcake seems to be the equivalent to finding the Holy Grail.
 

I got my chocolate cream cheese frosting recipe here. In a word, delicious. Although I think it could use a little less powdered sugar. I added the recommended amount and had to thin it out with some milk. Regardless, it tasted yummy.


Champagne Cupcakes with Whipped Strawberry Topping

I've made champagne cupcakes before (I think I was celebrating something...what WAS it???) and didn't like the 'from-scratch' recipe. I don't know why, but I thought it was too dense and tasted horrible. So I use this lovely recipe from a nice woman named Betty Crocker. The cupcakes always turn out so great, I don't see the point in making them from scratch when they taste this good from a box.


The whipped strawberry topping recipe came from here. SO GOOD. Like, I ate spoonfuls straight from the bowl when I was done frosting good. I still have some in the fridge, I can't decide how to enjoy it.

To top them off I added slices of champagne soaked strawberries - which does indeed taste as good as it sounds.

That's it! The one last thing to leave you with is this AMAZING idea at the party. Sign her shoes. It was part Confessions of a Shop-a-holic and part Cinderella. Loved it.
